Barley flour, wheat flour, dark muscovado sugar, baking powder, cold unsalted butter, buttermilk and an egg.

Mix until just combined, turn out onto a floured surface…

and pat the dough into two discs.

Smear the bottom disc generously with wild blueberry jam (or strawberry jam, or citrus marmalade)

Place the second disc on top and brush with melted butter. Sprinkle with a little sugar.

Cut into wedges.

Hmm… maybe clean your knife in between each cut. Place on buttered trays.

Bake 20-25 mins until golden brown and some of the jam has bubbled over onto the pan.

Move to a cooling rack while still warm.

Eat warm. Though you’ll feel incredibly full after just 2.
